I’m looking for a diet (hopefully low fat or fat free/low cal) Eggnog cake. A friend of mine bought this eggnog crunch cake that I found absolutely delicious and I have been looking in vain for a recipe that would even come close to this.. Thanks for your time. ![]()
I am a former chef and would suggest making a boxed cake with a low fat or fat free egg nog, use egg whites for the cake and as a crunch topping find a low fat granola at the grocery store or at a health food store, just mix some added spice like cinnimon in it and a tablespoon of melted low fat margarine or canola oil to it.
Mix the cake using the egg whites and the egg nog as the liquid, omit the oil or add a bit of applesauce and a bit of nutmeg. If you do this and use the granola you should be able to make it as low fat and help you keep it within a level your able to live with.

Isn’t the whole idea of eggnog is that it’s rich? I think that what basically makes eggnog cakes or cookies or even eggnog cheesecakes really delicious. I guess we really have to deal with those extra calories, lol! What I would usually do is to do an extra 30-minute run whenever I had eggnog or one of those really moist eggnog cake! I think it works, or at least it makes me feel less guilty, lol!
