If you have cable/sky you can watch the Food Channel (cable 260) there's a show called Healthy Appetite where a dietician called Ellie cooks up some amazing dishes that uses minimal healthy oil (canola) and uses lots of herbs/spices to make things taste really good without it being stodgy, or laden in fats. there's also good chef, bad chef that was shown some time ago, but i'm not sure if it's on sky still but it gives you two cooks cooking similar meals one with healthy ingredients and the other normal.

bbc food website is a great place to start it gives you plenty of advice, ideas for simple great yummy dishes
