Atkins Diet Recipes: Low Carb Chicken Nuggets (IF*)

In partnership with FaveHealthyRecipes, these are one of my kids favorite recipes with none of the processed chicken or various chicken parts found in commercial recipes. With the crisp outer breading sealing all the natural juices of the chicken in, there are no dry pieces and all pieces are uniformly done. That is something that can’t always be said for whole chicken pieces. If you are looking for what to eat with these chicken nuggets, I would suggest either my low carb honey mustard sauce, BBQ sauce, or a Buffalo sauce.

Ingredients:
2 pounds chicken breasts
*Breading*
1 1/2 cups Parmesan cheese
1/2 cup coconut flour (omit on Induction)
3 tsp onion powder
1 tsp garlic powder
1 tsp black pepper
1 tsp baking powder
*Egg Bath*
1 egg
1/2 cup cream
1/2 cup water
Makes 6 servings

Nutrition Info per serving:
313 Calories, 16.2g Fat, 3.4g Total Carbs (0.5g Fiber) , 37g Protein

(IF*) – Induction Friendly if omitting coconut flour (just increase the Parmesan Cheese)

    I grind all my own …
    I grind all my own nut flours. Commercial coconut flour? can be defatted, and that process might lead to the change of colors. I simply buy raw coconut and process it in a cheap $8 coffee grinder.

    Why? is your co flour white? Mine is yellowish and cakey texture, we get it from Tropical Traditions.

    For my deep frying …
    For my deep frying needs, I will often use peanut or refined olive oil for their high smoke temps. Coconut oil is good too, but is costly. I will occasionally use corn oil if price is really issue that week. I do? however replace oil well before it becomes rancid and breaks down.

    mmm, looks delish. what kind of oil do you use? I’ve switched over to either grapeseed/coconut or olive oil and? the latter the least often. grapeseed and coconut oil both cook hotter for deep frying..olive seems a bit heavy for that, to me anyway…so grapeseed or coconut for me,as an aside, both are sold as health supplements in capsules etc so are actually GOOD for you to fry in, gives you a good healthy reason to FRY 🙂 lol. lard/butter still make the best pastries though.

    how do we expect to get ripped by eating fat and way too much protein? are you retarded? fats and? protein doesn’t spike up your insulin, which in turn doesn’t make you store fat. on the other hand carbs get turned into glycogen, which spike up your insulin. and makes you store fat! if your the kind of person who thinks that dietary “fats” are the fats your body store then you are an ignorant. google how foods get processed in your body before you post your ignorance on the internet
