In partnership with FaveDiets (http://www.favediets.com/chicken ), I wanted to produce a quick recipe that is fast and a great food for breakfast, lunch, or just a snack.

Ingredients:
4 slices bacon
2 1/2 cups chicken
1/2 cup celery
1 tbsp sugar-free sweet pickle relish
1/2 tsp black pepper
1/2 cup mayonnaise
8 servings

Nutrition Information per Serving:
213 Calories, 15.6g Fat, 1g Carbs (.1g Fiber) , 16g Protein

    @bowulf Please keep posting the simple ones too. IMO, this is an easy and inexpensive recipe to? make and perfect for lunch and a snack like you said. I’m a busy mom and so appreciate the simple recipes especially ones my daughter will eat too :).

    @cinadina I am definitely glad I posted it. Sometimes I worry about posting these simple recipes as they might not seem worth the video, but honestly this is what low carbing mostly is. Easy, simple recipes that make us healthier each day. I like the sophisticated recipes, like the Poke Cake or Orange Chicken, but I am more likely to eat this on a daily basis than? those. Thanks for watching and commenting! I love the feedback.

    I just made this recipe tonight for the first time. This is one of my favorite recipes you have posted! This is so fast and easy to make if you do pick up one of the rotisseri chickens. This is my new? dish to take to work for lunch. I can’t say enough how good this is. It doesn’t taste low carb at all.

    @dildatota Cup is a unit of Imperial measurement, which is what we use in the States. Other countries use metric system, so the equivalent would be 250 ml. Check out this video for more information — “Atkins Diet Quick Hits: Portion Sizes or? what does a cup look like?”

    hey bro… i want to ask how much is “one cup” on atkins.. like you put 3 cups of mayonnaise in this recipe .. how much is one cup.. cz i am was on induction and i quit.. but i want to re start .. so as atkkins says? 3 cups of salad veggies .. what kinda cup he means….. cz i got 3 sizes of cups in home,, which one should i use for measurement ……

    @Bonnie90505? I am not a big fan of eggs, so that’s why I left them out of mine. Yolks are a good add to this or faux-tato salad, but I just can’t get over the mental block of the hard-boiled eggs. Always great to see you Bonnie!

    @SkinnySnowAngel I bought mine at Super-Walmart or Target, but I have also seen it (or the Mt Olive brand) at Hy-Vee (a? regional grocery store chain like Albertson, Krogers, et. al). Just look for the white Sugar Free banner on the label…

    @azobrn45 I know about the lighting; it frustrates me how dark my kitchen is late at night without natural lighting. I said to my wife next time we buy a house we will have to evaluate the kitchen for video-worthiness. lol My next purchase for my videos will probably be a light ring to help with the lighting.?

    Bacon!!! Lol I have been looking for a chicken salad recipe I like, I think this one fits the bill for sure , I have been using cooked chicken breast and it always fell flat :-/ I like the thought? of just buying a roasted chicken from the store 🙂

    never thought of adding bacon, oh yum, I have left over chicken right now in the frig…I prefer the dill relish, but I do have both ..also…I am thinking adding a boiled egg, and maybe some? green onion. you can’t go wrong with chicken salad on a lettuce leaf roll up, lots of crunches is what I enjoy the most. thanks for a great recipe Kent!

    I never thought to add Bacon to a chicken salad, but you said it well. You can’t have a low carb recipe if you don;t add bacon to it.. Bacon does it all!~! ? Great new spice.. Bacon DOES seem to make it better, doesn’t it?
