I’m pregnant and need cheap & healthy recipes or meal ideas for myself and fiancee. We have $150 for groceries?
I’m almost 2 months pregnant and my fiancee and I are on a really tight budget with planning a wedding and getting ready for a baby. I’m latin so I cook with lots of rice and chicken, but wanted some more ideas on cheap foods since my soon to be hubby is caucasian and wanted to cook traditional american meals for him too. I’m trying to include more fruit and vegetables in our diets too. Any recipes to share? Thanks
$150 for the month

Stay on the outer periphery of the supermarket & bulk-food aisle.
Avoid processed foods: flour, sugar, salt, & lard, (aka white death).
Avoid red meat, get ground turkey instead of hamburger.
Get fish 2 or 3 days a week, even if only canned tuna or sardines.
Buy seasonal vegetables in quantity, go for variety of colour.
Get whole grain pasta, brown rice, instead of white processed kinds.
Casserole
To make a casserole; use a base of cooked rice, pasta, or potato.
Pre-cook your chicken, or use tuna; then slice, chop, or tear it up.
Add diced celery, onions, or peppers, for extra flavour & some crunch.
Throw in any seasonal vegetables like: peas, corn, carrots, or green beans.
Make a cream sauce of flour & oil heated with milk or bouillon, & pour it over.
You can top with bread-crumbs, grated cheese, or sprinkle with spices.
Bake the whole thing at 400F until bubbly & browned.

Little Chicken Burgers
These easy appetizers are small patties made with ground chicken, get it? And apparently mini burgers are a big thing at the coolest parties these days, so serve these and be cool.
1/2 cup bread crumbs
2 lb ground chicken
3 garlic cloves, minced
1/2 cup minced Italian parsley
1/2 tsp dried oregano
1/2 tsp dried basil
2 Tbsp lemon juice
Salt & freshly ground black pepper
1 to 2 Tbsp extra-virgin olive oil
Place the bread crumbs in a small shallow dish. Set aside.
In a large bowl, combine the chicken, garlic, parsley, oregano, basil and lemon juice. Add salt and pepper to taste. Form the mixture into 16 patties, each flattened and about 2 inches in diameter.
Press the patties into the bread crumbs to coat each side. In a large nonstick skillet, heat the oil over medium heat and cook, turning once, until each side is browned and the patties have firmed up, about 10 minutes total. Serve hot.
